New Food

This week I bought and cooked with 3 things I have never used before.
I had to buy Jalapenos, Ginger root, and coconut milk to make Basil Chicken in Coconut Curry Sauce.
It was really so good, and I felt like I was eating at a Thai restaurant.

I recently started using Pinterest and that's where I found this recipe.
I've found lots and lots of yummy recipes on Pinterest.
The trouble I've found is that its really hard to lose weight when there is so much deliciousness staring you in the face. (well I guess looking at them doesn't really hurt, but its the wanting to experience them that does). So far, I've lost 15 pounds and I'm proud of that, but there is a lot more to do.
Maybe I should take a break from Pinterest....

Rex Lee Run

Last weekend I ran my second ever 5k. It was a family event,
so I was mostly planning to stay
with the kids, but after the uphill, I started running and didn't feel like stopping. There's room for much improvement, but considering I hadn't done any training, it felt pretty good.

Earlier in the week Brian's family got word that their Dad was diagnosed with advanced stages of pancreatic cancer. It was quite a shock.

Although most of the family is far away from his folks in California they rallied together to find ways to support him.


There were late night gatherings, Granddad's favorite cookie making party, trips to the store and frozen yogurt, and a decision to run in the Rex Lee Run at BYU (which is a cancer fundraiser race).


Brian's sisters worked really hard to make everyone matching t-shirts for the race.
Its a replica of a shirt their dad, Will, had when they were kids. "Where there's a Will, there's a Way." Very appropriate under the circumstances. And so fun to all match.


I think its really cool to watch them all come together and support each other during this
difficult time.

Ashby's ticklish spot

Wanna know how to make Ashby laugh?

Well....if you leave him on the toilet long enough (because you don't realize he is in there waiting for you to wipe his bottom and its probably been twenty or thirty minutes before he even calls your name, and he refuses to wipe his own bottom) he will hobble his way out of the bathroom and lie down. Then the laughing begins. Uncontrollable, silly laughter as he waits for his legs to stop tingling. I'm glad he can laugh about it, because that feeling usually makes me just want to cry.

Marathon Saturday

It was a very busy Saturday but filled with fun stuff.

At 7:30 am I left the house with Cody in tow to attend the YW regional basketball tournament, which lasted until 10. The tricky part was finding a ride (since we are still down to one car) and getting everything ready the night before so Brian could get the other kids to their first swimming lesson without me. Swimming lessons were tricky because Brian is not allowed in the ladies locker room and Paige is not allowed in the men's locker room. Hmm...I tried to mentally walk Paige through everything she needed to do. For the most part she got it, but the report from Brian was that it wasn't perfect.

The basketball games were fun and entertaining, of course. We had a GREAT turn out of girls from our stake, which I was thrilled about, and I'm so glad I bought extra drinks and muffins. We had about 15 girls show up for each game! Which meant a lot of substitutions and not as much playing time, but I think everyone still had fun. Even with such a great turn out it was still a bit discouraging because it seemed like the other stakes made total All-Star teams filled with ginormous and athletic laurels while we had first-time beehives. The scorekeeper stopped keeping track after it was 4-40 at half time. Oops.

At 11:00 am Brian took Paige to her friend's baptism. While they were gone I got everything ready for our next activity. It required packing all our snow gear, snacks, and hot chocolate.
At Noon a babysitter came over to watch Cody and Levi. I walked her through the routine. It was supposed to be a pretty easy babysitting job because the kiddos should have napped most of the afternoon. But apparently Levi decided to cause trouble. She babysat from Noon - 5pm while Brian and I took Paige and Ashby on a date.

At 12:30 pm we went out to lunch on our way up Provo Canyon to Soldier Hollow. Last summer Brian won 4 passes to go tubing and we finally had a chance to use them. It turned out to be a beautiful day, and surprisingly toasty when the sun was out.

From 2-4 pm we were able to tube down the hill. Two hours actually equated to only FOUR runs down the hill. The rest of the time was spent standing in line, or getting slowly towed up the hill. Crazy! I'm so glad we didn't have to pay the $70 it would have cost us. The kids absolutely LOVED it! They were so giddy! We've never done anything like it and it was actually a very laid-back, exciting experience. I thought it was very fun to speed down a large hill and not have to worry about going straight, or running into trees, or breaking your tailbone or anything. And then I didn't even have to hike up a big hill. So nice!


We got home around 5 pm which gave me just enough time to give everyone a bath for Sunday, make dinner (but not enough time to eat it) and get ready for my girls night out. I've never really had a girls night out before, so I was very excited!

At 7 pm I picked up my dates for a night out. This was another freebie in which Brian got tickets to the Hale Center Theater. The show was Xanadu (which he was not really interested in seeing) so I invited three of my friends to go out with me. Two of us were already familiar with the movie from when we were kids. I couldn't remember much about it, but I knew it was one of the only movies my grandparents had at the cabin and I loved watching it when I was little. So I kind of knew what to expect - a lot of cheesiness and a very strange plot! I thought the play was so funny. It was basically making fun of the movie but with all the great music included. I was smiling the whole time. I'm not so sure what my dates thought of it. Its kind of a lot to take in if you don't know what your getting into.

At 9:30 we continued our girls-night-out with frozen yogurt and lots of visiting. Its so nice to get away, relax, and enjoy great company for a while. Thanks to Brian for letting me have the night off, and for making it so I knew everything was totally taken care of at home.

At 11:15 pm I arrived home and got ready for Sunday - including figuring out Singing Time.

It was a very busy Saturday, but everything turned out really great!
